We know that we found a winner with this product. Smaller size Scallops generally don't have the depth of flavor
that is found in a larger Sea Scallops, but this one defies that idea. Magdalena Bay Scallops are as sweet as
their larger cousins.
China had been the dominant source for frozen Bay Scallops for several years. The China Scallops are a solid
product, chemical free and farm raised. However; the demand for a wild caught product caught closer to home, had
always been out there. So we felt lucky to connect with the Magdalena Bays, which covered all of the qualities
we wanted. They are called Mexican as they are diver caught in the waters off of Baja Mexico. They are then brought
to the USA for processing. They are hand shucked and quickly individually frozen making them an artisan product.
The only ingredient that you will find on the package is SCALLOPS- nothing else is added.
