Corvina Sea Bass

We love it when we find a product that is universally savored by our restaurants, country clubs and markets. This description fits our frozen corvina fillets to a tee!

Frozen corvina is a thick, firm seabass that is frozen in the best possible way. The South American processing vessels pick only the best fish and then freeze it pre-rigor
mortis and at a temperature of -40F. This results in cellular damage of less than 5% (regular freezing methods have a 40% cell damage rate). The fillets are deep skinned, trimmed
and cryovac’ed, insuring the best yield and shelf life.


The flavor profile for corvina is sweet and mild. It has a thick flake to the meat and is a pink color in the raw state but cooks up white. This makes it adapt well to virtually
any cooking method- broiling, grilling, and sautéing or baking all work great. This fish is treasured in all of Central America and is considered in many areas to be the only fish that
is legitimately suited for ceviche.
