The taste of these shrimp has been compared to Rock shrimp or Spot prawns. The meat is distinctively red in color in both the raw and cooked state. This is owing to the fact that
being wild, they consume more krill and protein than farmed shrimp. They work well in every shrimp application- cocktails, ceviche, salads, pastas, sautés and chowders.
The Monterey Bay Aquarium has not yet rated this product for sustainability. We hope to see a definitive sustainability determination from them in the near future.
The catch method is mid water trawl and the by-catch has been reduced greatly to acceptable levels.
